
Great Mexican Restaurant in Colorado Is All About the Bull
When it comes to Mexican restaurants in Colorado, we have plenty. One, in Windsor, combines a respect for local history with tasty tequila and a great menu.
Tiho's Tequila Bar and Restaurant in Windsor, Colorado
Where once there was a nice little Italian restaurant, there now resides a nice little Mexican restaurant, that wraps its arms around the area's history and the memory of a great bull.
The Windsor mill, at one time was a flour mill. Folks might remember a billiard table company being on the site. The 2008 tornado in Windsor damaged the mill, and when reconstruction was happening in 2017, the mill suffered a fire.
Tiho's Tequila Bar & Restaurant gets its name, according to them, from a famous bull named Tiho Elevation. Tiho, they say, roamed with the Timnath Holsteins on the local Fisher Farm. Throughout the restaurant, you'll find lots of bulls.

The owners/operators of Tiho's spent many months turning the space from an Italian restaurant into Tiho's. In 2017, the building, the former mill in Windsor, suffered a devastating fire; the exposed red bricks and wood beams inside Tiho's are what remained after that fire.

When I dined at Tiho's for the first time, I got the feeling that they'd been around for years, that's how comfortable it all felt. I enjoyed the bar itself, with a big metal sculpture of a bull stared down at me, knowing I should get back to work.
Tiho's fits right into the business that were already occupying the Windsor Mill: Peculier Ales and Windsor Mill Tavern. Where long ago workers gathered, today the community gathers for food, drinks, and fun.
