It seems like when the temperature drops and we all hibernate indoors in Northern Colorado, one thing many of us love to enjoy when it comes to food is soup. My wife loves soup, and honestly, I think she would be fine with having soup for dinner when it is 90 degrees outside.

Minestrone is an Italian soup made with vegetables, including beans, celery, carrots, leafy greens, stock, Parmesan cheese, and tomatoes. Minestone soup can also have pasta or rice in the ingredients, depending on who is cooking.
